This is controlled by the "Availability Dates".
Before a published assignment is available, students will be able to see the title of the assignment and the due date, but no other details about the assignment. When they click on the assignment before it’s available, students will see a note that says “This assignment is locked until [date you set].” Important note: Canvas will not automatically publish the assignment on the date you make it available. You have to publish the assignment for students to see it. Once the "available from" date has passed students will be able to see the details of the assignment and upload a document if applicable.
After the "available to" date the students will still see the details of the assignment but will no longer be able to submit a document if applicable. If there is a due date given, and it is before the "available to" date, then a late period is created.
