By default faculty and staff do not receive e-mail notifications for assignments turned in by students on time. This can be changed by turning on the All Submissions notifications. Note that if you set this notification to ASAP you will get an e-mail notification for each submission. You can choose to set this notification to daily or weekly, see the Canvas Notification Documentation for more details.
There is a separate notification misleadingly called Late Grading which sends notifications for late submissions which by default is set to daily. A late submission occurs when the assignment is still available for students but the due date has passed.
