You can do this 2 ways.


Appointment Group:
You can make appointment groups where students can sign up from the “Calendar” – this would add the date to their Calendars in Canvas. There would not be an easily printable list of who signed up when, but you could see the names in your Canvas Calendars.


Page:
You could create a page in Canvas that has sign up slots and allow students to edit that page. You can make an Announcement or an Assignment (if you wanted to give a due date) that links to that page and ask them to sign up for a slot.
Students wouldn’t have the date of their presentation in their Canvas calendar (but they would have an assignment due date to sign up on the Calendar).
If you used the Page, everyone would be able to see each other’s times – if you used the Appointment you can decide whether or not you want to let students see each others’ sign ups.
With a page, you would be able to see a list (and print it) of all the students who signed up.
